Lemon spaghetti

One of my favorite easy recipes is lemon spaghetti. I discovered it years ago as a side dish for a larger meal, but I liked it so much I made it as a standalone about once a week through my last years in college. Now Spenser has added his touch of grilled lemon pepper chicken to the mix. It’s super cheap and only takes about 10 minutes to make! Plus, it’s one of those meals that’s better the next day, in my opinion. The pasta soaks up the lemon juice and olive oil and the flavor gets even richer.




  • 1 lb spaghetti (my favorite is Barilla thin spaghetti)
  • 1/2 cup lemon juice (about 2-4 lemons… I used 2 tonight, with my handy citrus squeezer, but I usually used 4 when I was squeezing them by hand)
  • 2/3 cup olive oil
  • 2/3 cup parmesan cheese
  • as much lemon zest as you can get off a lemon
  • as much or as little chopped basil as you like (I always leave this off… who has time for basil? But it’s good, I cannot lie.)

  • Chicken breasts
  • Lemon pepper seasoning

  1. Pre-heat the grill to medium-high and season the chicken with the lemon pepper. Once pre-heated cook about 5-6 minutes on each side
  2. Boil your spaghetti. This takes 6-8 minutes
  3. Combine the lemon juice, olive oil, parmesan, and whisk
  4. When the pasta is done, strain it, and mix the sauce in, and wham, done! Top with lemon zest, basil, more cheese, whatever! It’s delicious.
